Beer Cocktail Recipe: Dublin Iced Coffee

This past Saturday, my boyfriend Mike and I were heading to the Gopher football game. With a forecast of 35 degrees at kickoff, which was 11 am, we layered up and prepared for a chilly gameday. With our layers of clothing in place, we needed one more crucial element: the beer jacket. 

I knew I needed caffeine in my system, and to find something that sounded palatable to drink at 9:30 am. Then I found it: the perfect morning beer cocktail, the Dublin Iced Coffee. Featuring my favorite style of beer, stout, cold brew coffee, irish whiskey, simple syrup and cream, it really does taste just like an iced coffee. It reminds me of a White Russian, but with a little more bite. 
 

Slightly modifying a recipe from Bon Appetit, I used Deschutes Obsidian Stout for the beer portion. It’s a high quality stout that already has notes of espresso, so it works nicely in this drink. I also went with Two Gingers irish whiskey. Shout out Minnesota! 

Because I am a genuinely lazy person, every time a cocktail recipe calls for simple syrup, I’ll skip it because it just seems like too much work for me. This time I bought the premixed bottle, so hopefully that supply will keep me going for awhile. If you want to make your own, here’s a recipe.
